Whipped Feta Board with Herbs & Olives


  • 14 oz Esti Feta Cheese in Brine
  • 2 tbsp Esti Extra Virgin Olive Oil
  • 3 teasp. Fresh Oregano
  • 1 teasp. Black Sesame Seeds
  • 1 teasp. Fresh Thyme
  • 1 tbsp Fresh Mild Chillies or Bell Peppers
  • 1 tbsp Dried Unsalted Pistachios
  • 1 tbsp pitted Olives
  • Pepper to taste
  • 2 Cucumbers



  1. Strain Esti Feta Cheese from the brine and place it inside a kitchen blender.
  2. Whip it on high speed until a creamy texture is developed.
  3. Spread it onto a wooden board with a spoon.
  4. Press the spread with the spoon gently, to form the pattern you desire making sure its not completely flat.
  5. Pour Esti Extra Virgin Olive Oil over it.
  6. Sprinkle with the herbs.
  7. Crush the Pistachios and sprinkle with them too.
  8. Pinch the olives and place them in the middle of the board.
  9. Wash then slice the cucumber edgewise without peeling it to form fresh “chips”.
  10. Serve your whipped feta board with the cucumber slices on the side, and use them to dip!
